Preheat oven to 425 degrees.
In a glass measuring cup, measure milk.
Add lemon juice and allow to sit for a few minutes.
Place self-rising flour, salt and garlic into a mixing bowl.
Beat with 6 tablespoons butter.
Add cream cheese and mix until pea-size clumps form.
Pour milk mixture into flour mixture and beat just until combined.
Sprinkle flour on work surface.
Work dough to one-inch thick.
Using a biscuit cutter, cut into 18 biscuits.
Place biscuits in a parchment-lined baking dishes so that they touch (if the biscuits touch, they will rise larger than if they don’t).
Melt 2 tablespoons butter and brush tops of biscuits liberally.
Place biscuits in oven and bake for 20-25 minutes or until tops are golden brown.
Remove from oven and cool slightly.
Combine remaining softened butter with mustard.
Slice biscuits in half, spread with mustard butter and place ham inside biscuits.
Serve warm or room temperature.
Refrigerate leftovers.
