Creamy Chipotle Pasta

1   package Cloverdale Cheddar Sausage
3   cups large shell pasta, cooked
1   cup Red pepper, thinly sliced
1   cup Green pepper, thinly sliced
1   cup Yellow pepper, thinly sliced
1/2   cup red onion, thinly sliced
1/8   cup frozen or fresh corn
1   t. minced garlic
3   T. canned chipotles, chopped
1   T. olive oil
3   T. fresh cilantro, chopped
1   pint heavy whipping cream
1   cup shredded cheddar cheese
  salt and pepper to taste


Slice Cloverdale sausage into 1" sections, slicing on the diagonal. In a medium sauté pan, heat olive oil on medium-high heat. Sauté garlic, vegetables and chipotles. Add sausage and heat through. Add 3-4 T. of water to deglaze pan and release flavors. Return to High heat and slowly add cream and pasta. Heat through, until cream slightly thickens. Add salt and pepper to taste. Stir in fresh cilantro and cheese just before serving; stir until cheese in melted and well mixed. Serve immediately.
