Breakfast on the Patio Egg and Polish Biscuit Sandwiches
3 tablespoons butter, divided
8 frozen or refrigerated ready-to-bake biscuits (or use grandma’s recipe)
6 Cloverdale Polish Sausages (any flavor of brats work great, too!)
½ cup milk
¼ teaspoon cracked black pepper
¼ teaspoon seasoned salt
¼ teaspoon garlic powder
6 slices cheddar cheese
½ cup mayonnaise
2 tablespoons mustard, any variety
Chopped parsley for garnish
Preheat oven to 375 degrees. Bake biscuits according to package directions.
Place polish sausages on work surface. Cut in quarters. Place grill pan over medium-high heat. Cook both sides of each sausage until warmed through and grill marks form.
Melt butter in microwave-safe dish. Brush biscuits with melted butter. Set aside.
Pour remaining butter in saute pan. Whisk to combine eggs, milk and seasonings. Pour eggs into pan and cook until just set.
In a small bowl, combine mayo and mustard.
Split biscuits. Spoon mayo mixture on top half of biscuits. Place an even amount of scrambled eggs on the bottom half of each biscuit. Top with cheese and three slices of Cloverdale Polish Sausage. Garnish with parsley. Place biscuit tops on sandwiches and close to combine. Serve warm.
TIP: For camping, this recipe can be prepared entirely on the grill. Place biscuits in tinfoil pan to bake on top rack of grill. Use side burner to make eggs and heat Polish Sausage through on grill grate.
